Description

A simple and delicious recipe for Classic Baked Feta Eggs, perfect for a quick breakfast or brunch. The creamy feta and runny yolks make a delightful combination.


Ingredients

4 large eggs

4 oz feta cheese, crumbled

1 tbsp olive oil

1/2 medium tomato, diced

1/4 cup fresh spinach

Salt and freshly ground black pepper, to taste

Pinch of red pepper flakes (optional)

Fresh chives, chopped, for garnish


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a small baking dish or two ramekins with olive oil.

2. Scatter crumbled feta evenly over the bottom.

3. Carefully crack the eggs over the feta.

4. Sprinkle diced tomato and spinach around the eggs.

5. Season with salt, pepper, and red pepper flakes (if using).

6. Bake 12–15 minutes, until whites are set and yolks are still runny (or to preference).

7. Garnish with fresh chives and serve immediately with toast or crusty bread.

Notes

For extra heat, add a dash of hot sauce before baking.
