Description

Creamy and tangy baked feta pasta with roasted cherry tomatoes and garlic. Easy, one-dish meal full of flavor.


Ingredients

Scale

1 block feta cheese (8 oz)

2 cups cherry tomatoes

3 garlic cloves, smashed

1/2 cup olive oil

1/2 tsp red pepper flakes (optional)

Salt, to taste

12 oz short pasta (penne, fusilli, or rotini)

1/4 cup fresh basil leaves


Instructions

1. Preheat oven to 400°F.

2. In a baking dish, combine cherry tomatoes, garlic, olive oil, red pepper flakes, and salt.

3. Place the block of feta in the center and drizzle with more olive oil.

4. Bake for 35–40 minutes until tomatoes burst and feta softens.

5. Meanwhile, cook pasta according to package directions and reserve 1/2 cup of pasta water.

6. Remove dish from oven, add pasta and pasta water, and stir until creamy.

7. Top with fresh basil and serve hot.

Notes

You can use crumbled feta, but reduce bake time slightly.

Add lemon zest or roasted veggies for variety.

Store leftovers in an airtight container and reheat with a splash of water.
