Ingredients

2 dried guajillo chilies

2 dried ancho chilies

2 garlic cloves

1 medium tomato

1 small onion

1 tablespoon vinegar

1/2 teaspoon cinnamon

1/2 teaspoon oregano

2 bay leaves

1/4 teaspoon clove

1 lb beef chuck or turkey thighs

4 cups water or broth

2 packs ramen noodles

1 soft-boiled egg (optional)

Fresh cilantro (for garnish)

Chopped onion (for garnish)

Jalapeño slices (for garnish)

Tapatio hot sauce (to taste)


Instructions

1. Toast dried chilies briefly in a dry pan.

2. Blend chilies with garlic, tomato, and onion until smooth.

3. Simmer mixture with vinegar and spices for 10 minutes.

4. Add beef or turkey and broth. Simmer until meat is very tender.

5. Remove meat, shred it, and strain the broth.

6. Cook ramen noodles separately.

7. Place noodles and shredded meat in a bowl.

8. Pour hot birria broth over the top.

9. Add garnishes like cilantro, onion, egg, and jalapeños.

10. Finish with a splash of Tapatio.

Notes

Use turkey for a leaner option with just as much flavor.

Don’t overcook the noodles. Add them just before serving.

Freeze leftover broth and shredded meat for future meals.
