Ingredients
For the filling:
6 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
For the topping:
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 tablespoons packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons unsalted butter, cold and cubed
1/2 cup buttermilk
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. In a large bowl, toss apples with brown sugar, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Spread into the prepared dish.
3. In a medium bowl, whisk flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
4. Cut in cold cubed butter until mixture resembles coarse crumbs.
5. Whisk buttermilk with vanilla; add to dry ingredients and stir just until combined (do not overmix).
6. Drop spoonfuls of topping evenly over the apples.
7. Bake 35–45 minutes, until the topping is golden and the filling is bubbling. Tent with foil if browning too quickly.
8. Cool at least 15 minutes before serving. Serve warm with ice cream or whipped cream, if desired.
Notes
For extra warmth, add 1/4 teaspoon ground cloves to the filling.
No buttermilk? Mix 1/2 tablespoon lemon juice or white vinegar with 1/2 cup milk; rest 5 minutes.
Topping can be made up to 24 hours ahead and refrigerated until baking time.
