Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
For the Cheesecake Layer:
16 ounces cream cheese, softened
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
For the Apple Topping:
2 medium Granny Smith apples, peeled, cored, and diced
¼ cup brown sugar, packed
½ teaspoon ground cinnamon
2 tablespoons unsalted butter
For the Caramel Drizzle:
¼ cup caramel sauce
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment, leaving overhang.
2. Make the crust: Mix graham crumbs, ¼ cup sugar, and melted butter. Press firmly into pan.
3. Bake 8–10 minutes until lightly golden; cool slightly.
4. Make cheesecake layer: Beat cream cheese with ½ cup sugar until smooth. Beat in egg and vanilla just to combine.
5. Spread cheesecake mixture evenly over crust.
6. Cook apple topping: Melt 2 Tbsp butter in a skillet over medium heat. Add diced apples, brown sugar, and cinnamon; cook 5–7 minutes until tender-crisp.
7. Spoon apples evenly over cheesecake layer.
8. Bake 35–40 minutes, until edges are set and center is slightly jiggly. Cool completely on a wire rack.
9. Chill at least 4 hours (overnight preferred).
10. Before serving, drizzle with caramel sauce, slice into squares, and enjoy.
Notes
Great make-ahead dessert. For extra caramel flavor, swirl a little caramel into the cheesecake batter before baking.
