Ingredients
1 cup cottage cheese
2 large eggs
2 tbsp almond flour
1/2 tsp baking powder
1/4 cup shredded cheddar or wise cheese
Pinch of salt
Butter or oil for greasing
Instructions
1. Mix cottage cheese, eggs, almond flour, and baking powder in a bowl.
2. Stir in shredded cheese and a pinch of salt until well combined.
3. Preheat and lightly grease your waffle maker.
4. Pour the batter into the hot waffle iron.
5. Cook for 3–5 minutes until golden and crisp.
6. Remove carefully and serve hot with your favorite toppings.
Notes
Store leftover cheese waffles in the fridge for up to 3 days.
Reheat in a toaster or oven to restore crispiness.
