Description

A delicious and customizable Classic Chicken Burrito Bowl, packed with flavor and perfect for a healthy meal. This recipe focuses on fresh ingredients and easy assembly, making it a great weeknight dinner.

Ingredients

Scale

1 lb boneless, skinless chicken breasts 1 tbsp olive oil 1 tsp chili powder 1/2 tsp cumin 1/4 tsp garlic powder Salt and black pepper to taste 1 cup cooked brown rice 1 (15-ounce) can black beans, rinsed and drained 1/2 cup corn (fresh or frozen) 1/4 cup chopped red onion 1/4 cup chopped fresh cilantro 1/2 avocado, diced Lime wedges for serving Optional toppings: salsa, sour cream, shredded cheese

Instructions

1. Pat chicken breasts dry and season with chili powder, cumin, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove chicken from skillet and let rest for 5 minutes. Then, dice or shred the chicken. In a bowl, combine cooked brown rice, black beans, corn, red onion, and cilantro. Assemble the burrito bowls by distributing the rice mixture into serving bowls. Top with diced chicken, avocado, and a squeeze of fresh lime juice. Serve immediately with optional toppings like salsa, sour cream, or shredded cheese.

Notes

For a spicier Classic Chicken Burrito Bowl, add a pinch of cayenne pepper to the chicken seasoning. Meal prep tip: Cook a larger batch of chicken and rice at the beginning of the week for quick assembly. Feel free to customize your Classic Chicken Burrito Bowl with your favorite vegetables and toppings.
