Description
Cowboy caviar is a bold, colorful dip or salad packed with beans, corn, veggies, and a tangy vinaigrette. It’s the ultimate healthy, easy-to-make dish perfect for parties or meal prep.
Ingredients
1 can black beans, rinsed and drained
1 can black-eyed peas, rinsed and drained
1 cup sweet corn
1 red bell pepper, diced
1 green bell pepper, diced
2 Roma tomatoes, diced
1/2 red onion, chopped
1/4 cup chopped cilantro
1 avocado, diced (optional)
3 tbsp olive oil
2 tbsp red wine vinegar
Juice of 1 lime
1/2 tsp cumin
Salt and pepper to taste
Instructions
1. Rinse and drain the beans and peas.
2. Chop all fresh vegetables and herbs.
3. Combine all solid ingredients in a large mixing bowl.
4. Whisk together olive oil, vinegar, lime juice, cumin, salt, and pepper.
5. Pour dressing over the mixture and toss gently.
6. Refrigerate for 30 minutes before serving.
Notes
For the freshest flavor, add avocado right before serving. This dish can be stored in the fridge for up to 4 days. Avoid freezing with avocado included.
