Description
Classic Creepy Eye Pies are a spooky and delicious treat, perfect for Halloween parties or any ghoulish gathering. These individual pies feature a rich fruit filling encased in a flaky pastry, topped with an eerie ‘eyeball’ decoration.
Ingredients
1 cup all-purpose flour
1/2 tsp salt
1/3 cup cold unsalted butter, cut into small pieces
2–3 tbsp ice water
1 (21 ounce) can cherry pie filling
1 egg, beaten
Black food coloring gel
Red food coloring gel
Green or blue food coloring gel
Instructions
1. In a large bowl, whisk together flour and salt; cut in butter until coarse crumbs form.
2. Gradually add ice water 1 tbsp at a time just until the dough comes together; form a disc, wrap, and chill 30 minutes.
3. Preheat oven to 375°F (190°C); roll dough to 1/8-inch thickness.
4. Cut twelve 3-inch rounds; place six on a parchment-lined baking sheet.
5. Spoon about 2 tbsp cherry pie filling onto each bottom round.
6. Top with remaining rounds and crimp edges with a fork to seal.
7. Tint a tablespoon of beaten egg with a touch of red gel; paint thin “veins” from the center outward.
8. Bake 18–20 minutes until golden; cool completely on a wire rack.
9. Add an iris with green/blue gel and a black dot for the pupil to finish the “eye.”
Notes
Extra creepy touch: press a small edible gummy worm into one pie before baking.
Best the day made; store airtight at room temperature up to 2 days.
