Description

Deviled potatoes are creamy, tangy, and easy to prepare. This recipe is a fun twist on deviled eggs, using baby potatoes as the perfect base.


Ingredients

12 baby potatoes

4 hard-boiled eggs

3 tbsp mayonnaise

1 tsp yellow mustard

1 tsp white vinegar

1/4 tsp smoked paprika

Salt and pepper to taste

1 tbsp chopped chives

2 tbsp cooked turkey crumbles (optional)


Instructions

1. Boil the baby potatoes until fork-tender, about 12 minutes.

2. Cool slightly, then slice in half and scoop a small hole in the center of each.

3. Peel the hard-boiled eggs and separate yolks.

4. In a bowl, mash yolks with mayo, mustard, vinegar, salt, and pepper until smooth.

5. Spoon or pipe the filling into each potato half.

6. Top with paprika, chives, and optional turkey crumbles.

7. Serve chilled or at room temperature.

Notes

Use red or yellow baby potatoes for best texture.
