1.5 lbs boneless, skinless chicken breasts 1 (10.75 oz) can cream of chicken soup 1 (8 oz) block cream cheese, softened 1/2 cup chicken broth 1/2 cup sun-dried tomatoes, diced 1 tablespoon Italian seasoning 1/2 teaspoon garlic powder Salt and black pepper to taste Fresh parsley, chopped, for garnish (optional) Cooked pasta, rice, or mashed potatoes for serving
Instructions
1. Place the chicken breasts in the bottom of your slow cooker. In a medium bowl, whisk together the cream of chicken soup, softened cream cheese, chicken broth, diced sun-dried tomatoes, Italian seasoning, garlic powder, salt, and pepper until smooth. Pour the mixture evenly over the chicken breasts in the slow cooker. Cover and cook on low for 3-4 hours, or on high for 2-3 hours, or until the chicken is cooked through and shreds easily. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the creamy sauce. Serve hot over your favorite pasta, rice, or mashed potatoes. Garnish with fresh parsley if desired.
Notes
