This Grecian Chicken Bowl is a healthy, Mediterranean-inspired dish packed with marinated Greek chicken, seasoned rice, crunchy vegetables, feta cheese, and creamy tzatziki. It’s ideal for meal prep or quick dinners.
Ingredients
2 boneless chicken breasts
2 tablespoons olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 teaspoon oregano
Salt and pepper to taste
1 cup cooked basmati rice
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup crumbled feta cheese
1/4 cup tzatziki sauce
1 tablespoon chopped parsley
Instructions
1. Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for 30 minutes.
2. Grill or pan-sear the chicken until golden brown and fully cooked. Let it rest, then slice.
3. Layer cooked rice into bowls as the base.
4. Top with sliced chicken, vegetables, and crumbled feta.
5. Add tzatziki sauce and garnish with chopped parsley.
6. Serve warm or chilled.
