Description

Fresh, creamy, and full of flavor, this green goddess salad is packed with herbs, crunch, and a tangy dressing made in minutes.


Ingredients

Scale

1 small green cabbage, chopped

1 cucumber, diced

3 scallions, sliced

1 cup parsley

2 tbsp chives

1 garlic clove

1 lemon, juiced

1 tbsp olive oil

1/2 avocado or 2 tbsp Greek yogurt

Salt to taste

Optional: turkey slices, chickpeas, pumpkin seeds


Instructions

1. Chop the cabbage, cucumber, and scallions. Add to a large bowl.

2. Blend parsley, chives, garlic, lemon juice, olive oil, and yogurt or avocado until creamy.

3. Add salt to taste.

4. Pour dressing over the chopped veggies and toss well.

5. Let the salad chill for 10 to 15 minutes in the fridge.

6. Top with turkey, chickpeas, or seeds if using.

7. Serve cold.

Notes

This salad stores well for 2 days once dressed.

Keep dressing separate until ready to eat if making ahead.
