Ingredients
1 cup almond flour
1.5 cups shredded mozzarella cheese
2 tbsp cream cheese
1 egg
2 tbsp erythritol
1 tsp ground cinnamon
1 tsp baking powder
Instructions
1. Melt mozzarella and cream cheese together until smooth.
2. Stir in almond flour, egg, and baking powder to form a dough.
3. Roll dough between parchment sheets.
4. Spread with a filling of cinnamon and erythritol.
5. Roll up and slice into 6 equal rolls.
6. Place in a greased baking dish.
7. Bake at 350°F (175°C) for 20 minutes or until golden.
8. Let cool slightly and top with sugar-free cream cheese frosting.
Notes
Use almond flour for best texture. For a nut-free version, substitute with coconut flour and adjust liquids.
