Ingredients
1 cup almond flour
1/4 cup coconut flour
1/2 cup natural peanut butter
1/4 cup erythritol or monk fruit sweetener
1 egg
2 tbsp butter, melted
1/2 tsp vanilla extract
1/4 cup sugar-free chocolate chips (optional)
Instructions
1. Preheat oven to 350°F.
2. Mix almond flour, coconut flour, and sweetener in a bowl.
3. Add peanut butter, egg, melted butter, and vanilla extract.
4. Stir until smooth and well combined.
5. Fold in sugar-free chocolate chips if desired.
6. Scoop dough onto a baking sheet and flatten each with a fork.
7. Bake for 10-12 minutes until golden around the edges.
8. Cool completely before serving.
