Ingredients
1/2 cup cold water
2 tablespoons unflavored gelatin powder
2 tablespoons erythritol or keto-friendly sweetener
1 teaspoon sugar-free flavor extract (like strawberry or lemon)
2–3 drops natural food coloring (optional)
Instructions
1. Pour cold water into a small saucepan.
2. Sprinkle gelatin evenly over the water and let it sit for 2 minutes.
3. Add sweetener and flavor extract to the mixture.
4. Heat on low, stirring constantly until everything fully dissolves.
5. If using, add food coloring and stir again.
6. Carefully pour the liquid into silicone gummy bear molds.
7. Refrigerate for 20 minutes or until firm.
8. Pop out the gummy bears and store them in an airtight container in the fridge.
Notes
For firmer keto gummy bears, add an extra tablespoon of gelatin.
To reduce sweetness, cut the sweetener by half.
Store the keto gummy bears in the refrigerator for up to one week.
For longer storage, freeze the keto gummy bears in a sealed container.
