1/2 cup erythritol or monk fruit sweetener
1 large egg
Instructions
1. Preheat your oven to 350°F (175°C).
2. Mix peanut butter, sweetener, and egg in a bowl until smooth.
3. Scoop dough onto a parchment-lined baking sheet.
4. Flatten each ball with a fork in a crisscross pattern.
5. Bake for 10 to 12 minutes.
6. Allow cookies to cool completely before handling.
Notes
