This low carb chicken and broccoli casserole is a creamy, cheesy, and protein-packed dish perfect for weight loss, keto diets, and easy meal prep.
Ingredients
2 cups cooked chicken breast, shredded
2 cups broccoli florets, steamed
1 cup shredded cheddar cheese
1/2 cup sour cream
4 oz cream cheese
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F.
2. Steam broccoli until tender-crisp.
3. Cook and shred chicken breast.
4. Mix cream cheese, sour cream, garlic powder, salt, and pepper.
5. Add chicken, broccoli, and half the cheese to the mixture.
6. Spread into a baking dish and top with remaining cheese.
7. Bake for 20 to 25 minutes until bubbly and golden.
Notes
You can add cauliflower rice or mushrooms for extra volume.
Swap cheddar with mozzarella or Parmesan for a flavor change.
Best served fresh but stores well in the fridge for up to 3 days.
