Description
This crunchy low carb granola is a delicious, keto-friendly breakfast packed with healthy fats, protein, and fiber from nuts, seeds, and coconut.
Ingredients
1 cup almonds (chopped)
1 cup pecans
1/4 cup pumpkin seeds
2 tbsp chia seeds
1/4 cup shredded coconut
2 tbsp coconut oil
2 tbsp erythritol
1 tsp vanilla extract
1/2 tsp cinnamon
Instructions
1. Preheat oven to 300°F.
2. Mix all dry ingredients in a large bowl.
3. In a separate bowl, melt coconut oil and mix with erythritol, vanilla, and cinnamon.
4. Pour wet mixture over the dry mix and stir well.
5. Spread the granola evenly on a parchment-lined baking tray.
6. Bake for 20 to 25 minutes, stirring halfway through.
7. Let it cool completely before storing in an airtight container.
Notes
Store at room temperature for up to 2 weeks or refrigerate for longer freshness. For extra crunch, cool completely before sealing. Enjoy with Greek yogurt or almond milk.
