Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1/2 cup pure maple syrup
1/2 cup sour cream (or plain Greek yogurt)
1 tsp vanilla extract
2 medium apples, peeled, cored, and diced (about 1.5 cups)
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt; set aside.
3. In a large bowl, cream butter with granulated sugar and brown sugar until light and fluffy.
4. Beat in eggs one at a time. Stir in maple syrup, sour cream, and vanilla.
5. Add dry ingredients to wet and mix just until combined (do not overmix).
6. Fold in diced apples.
7. Pour batter into prepared pan and smooth the top.
8. Bake 50–60 minutes, until a skewer inserted in the center comes out clean. Tent with foil if browning too quickly.
9. Cool in pan 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
