A light, airy, and incredibly fast mousse that tastes just like the best part of a pumpkin pie. It’s elegant, creamy, and requires absolutely no cooking.
Ingredients
1 cup cold milk
1 (3.4 oz) box instant vanilla pudding mix
1 cup pumpkin puree
1 teaspoon pumpkin pie spice
1 (8 oz) tub whipped topping (like Cool Whip), thawed
Instructions
1. In a large bowl, add the cold milk and the instant vanilla pudding mix. Whisk for 2 minutes until it becomes smooth and thick.
2. Whisk in the pumpkin puree and pumpkin pie spice until everything is well combined.
3. Gently fold in the thawed whipped topping until no streaks remain.
4. Serve immediately or chill for up to an hour before serving.
Notes
For the best results, make sure your milk is very cold.
This mousse can be made a day ahead of time; just keep it covered in the refrigerator.
Serve garnished with a sprinkle of cinnamon or some graham cracker crumbs.
