Ingredients
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 (28 oz) can high-quality crushed tomatoes
2 cups vegetable broth
1 tsp dried oregano
1/2 cup fresh basil leaves, chopped
1/2 cup heavy cream (optional)
Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for another minute until fragrant.
3. Pour in the crushed tomatoes, vegetable broth, and dried oregano. Stir to combine.
4. Bring the soup to a boil, then reduce the heat and let it simmer for at least 20 minutes to allow the flavors to meld.
5. Use an immersion blender to blend the soup directly in the pot until it reaches a smooth, creamy consistency.
6. Stir in the fresh basil and the optional heavy cream. Season with salt and pepper to your liking.
7. Serve hot, garnished with extra basil or croutons.
Notes
For the best flavor, use high-quality canned tomatoes like San Marzano.
An immersion blender is easiest, but you can also carefully transfer the soup in batches to a regular blender.
