Ingredients
1 large tortilla (flour or low-carb)
2 scrambled eggs
2 tbsp shredded cheddar cheese
1/4 avocado, sliced
2 tbsp salsa
1 tsp butter or oil for toasting
Instructions
1. Warm the tortilla slightly for easy folding.
2. Make a single cut from the center to one edge.
3. Place one filling in each quarter: eggs, cheese, avocado, salsa.
4. Fold each quarter over the next clockwise to form a triangle.
5. Heat butter or oil in a skillet over medium heat.
6. Place folded wrap in the skillet and toast 2 minutes per side.
7. Remove, slice if desired, and serve warm.
Notes
Use flavored tortillas for variety.
Swap eggs for tofu to make it plant-based.
