Ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar
½ cup packed light brown sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon salt
1 large egg
½ cup unsweetened applesauce
¼ cup vegetable oil
1 teaspoon vanilla extract
2 medium apples, peeled, cored, and finely diced
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, cloves, and salt.
3. In a separate medium bowl, whisk together the egg, applesauce, vegetable oil, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
5. Gently fold in the diced apples.
6. Pour the batter into the prepared baking pan and spread evenly.
7. Bake for 30–35 minutes, or until a wooden skewer inserted into the center comes out clean.
8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
