Ingredients
1 ripe banana
2 large eggs
1.5 cups almond flour
1 teaspoon baking powder
1/4 cup low carb sweetener (like erythritol or monk fruit)
1/4 cup chopped walnuts
1 teaspoon vanilla extract
1 tablespoon unsweetened almond milk (optional)
Instructions
1. Preheat oven to 350°F and prepare a loaf pan with parchment paper.
2. Mash the banana in a large bowl.
3. Add eggs, sweetener, and vanilla extract. Mix well.
4. In a separate bowl, combine almond flour, baking powder, and salt.
5. Combine wet and dry ingredients until fully mixed.
6. Fold in chopped walnuts.
7. Pour batter into the loaf pan and spread evenly.
8. Bake for 45 minutes or until a toothpick comes out clean.
9. Let cool before slicing and serving.
Notes
For even fewer carbs, use banana extract instead of a real banana.
