Transform ordinary mushrooms into terrifyingly tasty Spooky Stuffed Mushroom Eyeballs, perfect for a Halloween party. These savory bites combine creamy cheese, herbs, and olives for a ghoulishly good appetizer.
Ingredients
12–14 large white mushrooms (or cremini)
2 tbsp olive oil
1/4 cup finely chopped onion
2 cloves garlic, minced
4 oz cream cheese, softened
1/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
1/4 tsp salt
1/8 tsp black pepper
12–14 small black olives, halved
Red food coloring gel (optional, for ‘veins’)
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Gently clean mushrooms and carefully remove stems; finely chop the stems.
3. Heat olive oil in a small skillet over medium heat. Add chopped stems and onion; cook 5–7 minutes until softened. Add garlic; cook 1 minute more. Remove from heat to cool slightly.
4. In a medium bowl, combine cream cheese, Parmesan, parsley, salt, and pepper. Stir in the cooled mushroom-onion mixture.
5. Spoon or pipe the filling into the mushroom caps, mounding slightly.
6. Place a halved black olive, cut-side down, in the center of each filled cap to create the ‘pupil’.
7. If desired, use a toothpick with a tiny amount of red food coloring gel to draw ‘veins’ on the cream cheese.
8. Arrange stuffed mushrooms on the prepared sheet.
9. Bake 15–20 minutes, until mushrooms are tender and filling is lightly golden and bubbly.

Notes
For an extra spooky touch, drizzle a little sriracha or red pepper sauce around the olive for a more pronounced ‘bloodshot’ effect.
