Description

Transform ordinary mushrooms into terrifyingly tasty Spooky Stuffed Mushroom Eyeballs, perfect for a Halloween party. These savory bites combine creamy cheese, herbs, and olives for a ghoulishly good appetizer.


Ingredients

1214 large white mushrooms (or cremini)

2 tbsp olive oil

1/4 cup finely chopped onion

2 cloves garlic, minced

4 oz cream cheese, softened

1/4 cup grated Parmesan cheese

2 tbsp chopped fresh parsley

1/4 tsp salt

1/8 tsp black pepper

1214 small black olives, halved

Red food coloring gel (optional, for ‘veins’)


Instructions

1. Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.

2. Gently clean mushrooms and carefully remove stems; finely chop the stems.

3. Heat olive oil in a small skillet over medium heat. Add chopped stems and onion; cook 5โ€“7 minutes until softened. Add garlic; cook 1 minute more. Remove from heat to cool slightly.

4. In a medium bowl, combine cream cheese, Parmesan, parsley, salt, and pepper. Stir in the cooled mushroom-onion mixture.

5. Spoon or pipe the filling into the mushroom caps, mounding slightly.

6. Place a halved black olive, cut-side down, in the center of each filled cap to create the ‘pupil’.

7. If desired, use a toothpick with a tiny amount of red food coloring gel to draw ‘veins’ on the cream cheese.

8. Arrange stuffed mushrooms on the prepared sheet.

9. Bake 15โ€“20 minutes, until mushrooms are tender and filling is lightly golden and bubbly.

Notes

For an extra spooky touch, drizzle a little sriracha or red pepper sauce around the olive for a more pronounced ‘bloodshot’ effect.
