  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tablespoons Sriracha or Gochujang adjust to taste
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon garlic powder or fresh minced garlic
  • 1/2 teaspoon sesame oil plus a little extra for the sauce twist
  • 1 teaspoon grated fresh ginger
  • Salt to taste
  • black pepper to taste

  • Toasted sesame seeds

Instructions
 

Preparation

  • Pat chicken cubes dry and season generously with salt and pepper.
  • Whisk together mayonnaise, chili sauce, Sriracha, rice vinegar, honey, garlic powder, sesame oil, and ginger to make the sauce; adjust seasonings to taste.

Assembly and Cooking

  • Thread chicken pieces onto skewers, ensuring they are not packed too tightly.
  • For grilling, preheat to medium-high, oil grates, and cook skewers for 3-4 minutes per side until chicken is cooked through (165°F/74°C).
  • For baking, preheat oven to 400°F (200°C), arrange skewers on a lined baking sheet, and bake for 15-20 minutes, flipping halfway, then broil for 1-2 minutes for crispiness.

Finishing Touch

  • Transfer cooked skewers to a platter, then drizzle or brush generously with the prepared Bang Bang sauce and garnish with sesame seeds and green onions if desired.

Notes

Soak wooden skewers in water for at least 30 minutes before use to prevent burning. Adjust the amount of Sriracha or Gochujang to your preferred level of spice. For an extra kick, add a pinch of red pepper flakes to the sauce. These skewers can be served with a side of rice or a fresh salad.
