  • 1.5 lbs Sausage 6-8 links, Italian mild or spicy recommended
  • 3 medium Apples Honeycrisp, Fuji, or Gala
  • 1 large Onion cut into wedges
  • 1 medium Sweet Potato peeled and diced (optional)

Dressing

  • 2 tablespoons Olive Oil
  • 1 tablespoon Maple Syrup
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Dried Thyme
  • Salt to taste
  • Black Pepper to taste

Garnish (optional)

  • Fresh parsley or chives

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Slice the sausage into 1-inch rounds, apples into 1/2-inch wedges, and onion into similar-sized wedges. If using, peel and dice the sweet potato into 1-inch cubes.

Cooking

  • Combine the sliced sausage, apples, onion, and sweet potato in a large bowl.
  • Drizzle with olive oil, maple syrup, and Dijon mustard; then sprinkle with dried thyme, salt, and pepper, tossing gently to coat.
  • Spread the mixture in a single layer on your prepared baking sheet, ensuring not to overcrowd the pan.
  • Roast for 25-30 minutes, tossing halfway through, until the sausage is cooked and vegetables are tender-crisp.

Serving

  • Remove from the oven and serve immediately, garnishing with fresh parsley or chives if desired.

Notes

For an extra touch of flavor, you can add a pinch of cinnamon or nutmeg along with the dried thyme. This dish also works well with other root vegetables like carrots or parsnips.
