Equipment

  • Oven
  • Muffin tin
  • Paper liners (optional)
  • Large bowl
  • Rubber spatula
  • Wire rack
  • Whisk
  • Medium bowl

Ingredients

Dry Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt

Wet Ingredients

  • 2 Large eggs
  • 0.75 cup Whole milk
  • 0.5 cup Unsalted butter melted
  • 1 teaspoon Vanilla extract

Add-ins and Topping

  • 1.5 cups Fresh blueberries
  • 2 tablespoons Turbinado sugar for topping

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a 12-cup muffin tin by lining it with paper liners or greasing it well.

Mixing Dry Ingredients

  • In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt; whisk thoroughly.

Mixing Wet Ingredients

  • In a separate bowl, whisk the eggs, then incorporate the milk, melted butter, and vanilla extract until fully combined.

Combining Ingredients

  • Pour the wet mixture into the dry ingredients and gently fold with a rubber spatula until just combined, being careful not to overmix.

Adding Blueberries

  • Gently fold the fresh blueberries into the batter; if using frozen blueberries, toss them with a tablespoon of flour beforehand.

Baking

  • Divide the batter evenly among the prepared muffin cups, filling almost to the top, and sprinkle turbinado sugar over each muffin if desired.
  • Bake at 400°F (200°C) for 5 minutes, then reduce temperature to 375°F (190°C) and continue baking for 15-20 minutes, or until a wooden skewer comes out clean.

Cooling

  • Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra fluffy muffins, ensure your leavening agents (baking powder and baking soda) are fresh. Do not overmix the batter, as this can lead to tough muffins. You can also add a pinch of cinnamon or lemon zest to the dry ingredients for an added flavor dimension.
