  • 1 cup unsalted butter, softened Make sure your butter is at room temperature.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup dried cranberries, chopped Try to chop them for even distribution.
  • 1 Zest of 1 orange
  • 1 tablespoon orange juice

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the softened butter and sugar together until fluffy.
  • Add the egg and vanilla extract. Mix well until combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture. Stir until well combined.
  • Fold in the chopped cranberries, orange zest, and orange juice.
  • Drop tablespoons of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10 to 12 minutes or until the cookies are lightly golden around the edges.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra flavor, add a pinch of cinnamon to the dough. Drizzle icing made of powdered sugar and orange juice on top for decoration. Store cookies in an airtight container at room temperature for up to a week or freeze for three months.
