Peach Filling

  • 6-8 medium ripe peaches (about 6 cups sliced), peeled and sliced
  • 1/2 cup granulated sugar (adjust based on sweetness of peaches)
  • 1/4 cup all-purpose flour or cornstarch (for thickening)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • salt Pinch
  • 1 tablespoon fresh lemon juice

Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk (whole milk or 2% works best)
  • 1/4 cup unsalted butter (1/2 stick), melted

Instructions
 

Prepare the Peaches

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the peeled and sliced peaches with 1/2 cup granulated sugar, flour or cornstarch, vanilla extract, cinnamon, nutmeg, salt, and lemon juice; toss to coat evenly.
  • Pour the peach mixture into a 9x13-inch baking dish, spreading it into an even layer.

Make the Topping

  • In a separate medium bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, baking powder, and 1/4 teaspoon salt.
  • Pour the milk and melted butter into the dry ingredients and stir until just combined; avoid overmixing.

Assemble and Bake

  • Spoon the topping batter in dollops over the peach mixture.
  • Place the baking dish on a baking sheet and bake for 40-50 minutes, or until the topping is golden brown and the filling is bubbly.
  • Remove from the oven and cool on a wire rack for 15-20 minutes before serving to allow the filling to set.

Notes

Ensure peaches are ripe for the best flavor. A combination of yellow and white peaches can add complexity. If using frozen peaches, thaw and drain them before use.
