  • 1 ounce dry onion soup mix
  • 2 pounds potatoes, peeled and quartered
  • 1 pound carrots, peeled and cut into chunks
  • 3 celery stalks, cut into chunks
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

  • Cover and cook on low heat for 8-10 hours or on high for 4-5 hours until the beef is tender and shreds easily.
  • Remove the roast and vegetables from the crock pot, shred the beef, and serve warm with the cooking liquid.

Notes

For best results, sear the beef roast in a hot pan before adding it to the crock pot to lock in extra flavor. You can also add other root vegetables like parsnips or sweet potatoes.
