Main Ingredients

  • 1 cup black beans (canned or cooked) Rinse and drain if using canned beans.
  • 1 cup rice (white or brown) Cooking times may vary between types.
  • 1 lb sausage (chicken, turkey, or pork) Choose according to preference.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 cups broth (chicken or vegetable)
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper
  • as needed Olive oil for cooking

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onion, bell pepper, and garlic; sauté until softened.
  • Add sausage and cook until browned.

Cooking

  • Stir in black beans, rice, broth, cumin, paprika, salt, and pepper.
  • Bring to a boil, then reduce heat to low and cover. Cook until the rice is tender and the liquid is absorbed, about 20-25 minutes.
  • Fluff with a fork and serve hot.

Notes

Serve hot as a main course. Garnish with fresh cilantro, avocado slices, or a dollop of sour cream. Pairs well with a side salad or steamed vegetables. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months.
