  • 1 loaf brioche bread (13-16 oz), cut into 1-inch cubes
  • 2 cups blueberries fresh or frozen
  • 8 large eggs
  • 1 ½ cups milk (dairy or non-dairy)
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon lemon zest (from 1-2 lemons)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons cream cheese softened and cut into small pieces

Instructions
 

Preparation

  • Lightly grease a 9x13 inch baking dish; then, arrange half of the brioche cubes and half of the blueberries evenly in the bottom of the dish.
  • Repeat the layering with the remaining bread and blueberries.
  • In a large bowl, whisk together eggs, milk, heavy cream, sugar, lemon zest, lemon juice, vanilla extract, cinnamon, and salt until they are well combined.
  • Gently stir the softened cream cheese pieces into the egg mixture.
  • Pour the egg mixture evenly over the bread and blueberries, ensuring all bread is saturated, and gently press down to immerse it.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.

Baking

  • Preheat your oven to 375°F (190°C) approximately 15-20 minutes before baking.
  • Remove the casserole from the refrigerator and let it sit at room temperature for 15-20 minutes while the oven preheats.
  • Bake for 45-55 minutes, or until the casserole is golden brown and set in the center.
  • Let the casserole rest for 5-10 minutes.

Notes

For best results, allow the casserole to soak overnight in the refrigerator to ensure the brioche fully absorbs the egg mixture. This makes the casserole more flavorful and custardy. If using frozen blueberries, there is no need to thaw them before adding to the casserole; they will cook down nicely during baking.
