Main Ingredients

  • 2 lbs chicken breast boneless, skinless, cut into 1-inch cubes
  • 1 can (28 oz) canned diced tomatoes undrained
  • 6 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil

Vegetables

  • 1 medium onion chopped
  • 2 stalks celery stalks chopped
  • 1 medium green bell pepper chopped
  • 3 cloves garlic minced

Garnish

  • fresh parsley chopped

Instructions
 

Preparation

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add chicken and cook until browned; remove chicken from pot and set aside.

Cooking the Soup

  • Add onion, celery, and bell pepper to the pot and cook until softened, about 5-7 minutes.
  • Stir in garlic and cook for another minute until fragrant.
  • Return chicken to the pot, then add diced tomatoes, chicken broth, and Cajun seasoning.
  • Bring to a boil, then reduce heat and simmer for 20-30 minutes, allowing flavors to meld.

Serving

  • Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

For an extra kick, add a pinch of cayenne pepper with the Cajun seasoning. You can also add corn or black beans for more texture and flavor.
