These refreshing chicken salad cucumber bites are a perfect light appetizer or snack. Shredded chicken is mixed with a creamy dressing and served in crisp cucumber cups.

Ingredients
  

Chicken Salad

  • 2 cups cooked chicken
  • 1/2 cup mayonnaise
  • 1-2 stalks celery
  • 1/4 cup red onion optional
  • 2-3 tablespoons fresh herbs dill, chives, or parsley
  • 1-2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

For Serving

  • 1 large cucumber
  • Fresh dill or paprika for garnish

Instructions
 

Prepare Chicken Salad

  • In a medium bowl, combine the shredded or diced cooked chicken.
  • Add mayonnaise, finely diced celery, minced red onion (if using), fresh herbs, Dijon mustard, and lemon juice; mix well until combined and creamy.
  • Season with salt and pepper to taste, adjusting mayonnaise or other seasonings as needed.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Assemble Bites

  • Slice the cucumber into 1/2-inch thick rounds.
  • Using a small spoon or melon baller, scoop out a shallow well from the center of each cucumber slice.
  • Fill each well with a spoonful of the prepared chicken salad.
  • Garnish with fresh dill or a sprinkle of paprika before serving.

Notes

For best results, make sure your chicken is well-chilled before mixing. You can also use Greek yogurt instead of mayonnaise for a lighter option.
