Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 0.5 cup unsalted butter, melted

For the Cinnamon Swirl

  • 0.5 cup granulated sugar
  • 1 tablespoon ground cinnamon

For the Streusel Topping

  • 0.5 cup all-purpose flour
  • 0.25 cup packed brown sugar
  • 0.5 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, diced

Instructions
 

Prepare the Cake

  • Preheat your oven to 350°F (175°C) and grease and flour a 9-inch square baking pan.
  • In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt.
  • In a separate bowl, whisk the egg, milk, and melted butter, then add the wet ingredients to the dry ingredients, mixing until just combined.

Assemble the Swirl and Topping

  • For the cinnamon swirl, combine 0.5 cup granulated sugar and 1 tablespoon cinnamon.
  • For the streusel topping, mix 0.5 cup flour, 0.25 cup brown sugar, and 0.5 teaspoon cinnamon, then cut in the diced cold butter until crumbly.

Bake the Coffee Cake

  • Pour half of the cake batter into the prepared pan, sprinkle with the cinnamon swirl mixture, and then top with the remaining batter.
  • Evenly sprinkle the streusel topping over the top of the cake, then bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the coffee cake cool in the pan on a wire rack before slicing and serving.

Notes

For an extra touch, you can add a simple glaze made from powdered sugar and milk after the cake has cooled.
