  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper (any color) chopped
  • 1 (14.5 ounce) can diced tomatoes undrained
  • 1 cup beef broth
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup frozen corn (or other mixed vegetables)

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, then drain excess fat.
  • Add chopped onion and minced garlic to the skillet, cooking for 3-5 minutes until the onion softens and becomes translucent.
  • Stir in bell pepper, diced tomatoes (undrained), beef broth, Italian seasoning, salt, and pepper; bring the mixture to a simmer.
  • Reduce heat to medium-low, cover, and simmer for 10-15 minutes until bell pepper is tender-crisp and the sauce thickens.
  • Stir in frozen corn or other mixed vegetables and cook for 2-3 minutes until heated through.
  • Remove from heat; optionally sprinkle with shredded cheese, cover to melt, and garnish with fresh parsley before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. This dish is also great served over rice, pasta, or with crusty bread.
