  • 1 lb lean ground turkey (93/7 or 99/1)
  • yellow or white onion finely diced
  • bell pepper (any color) diced
  • 2 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup low-sodium chicken or vegetable broth
  • 5 oz fresh spinach
  • Salt and black pepper to taste

  • Heat olive oil in a large skillet over medium-high heat, then cook ground turkey until browned and no pink remains, draining excess fat and setting turkey aside.
  • Reduce heat to medium, add more olive oil if needed, and cook diced onion and bell pepper for 5-7 minutes until softened; stir in minced garlic and cook for 1 minute.
  • Pour in undrained diced tomatoes and broth, bring to a simmer while scraping up browned bits, then season with salt and pepper.
  • Return the cooked turkey to the skillet, stir to combine, and simmer for 5-7 minutes to meld flavors and slightly thicken the sauce.
  • Stir in fresh spinach a handful at a time, allowing it to wilt and incorporate into the mixture.
  • Taste and adjust seasonings as needed, then serve hot.

Notes

For a spicier kick, add a pinch of red pepper flakes with the garlic. Serve this dish over brown rice, quinoa, or with a side of crusty bread for a complete meal.
