  • 4 units Boneless, skinless chicken thighs about 1.5 lbs
  • 1 lb Cremini mushrooms sliced
  • 2 medium Yellow onions sliced
  • 1/2 cup Balsamic vinegar
  • 1/2 cup Chicken broth
  • 3-4 cloves Garlic minced
  • 2-3 tablespoons Olive oil
  • 1 tablespoon Fresh thyme chopped (or 1 teaspoon dried)
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Freshly ground black pepper or to taste
  • 2 tablespoons Fresh parsley chopped (optional, for garnish)

Instructions
 

Preparation

  • Pat chicken thighs dry and season generously with salt and pepper.
  • Sear chicken in a large skillet with olive oil for 4-5 minutes per side until golden brown, then set aside.
  • Sauté sliced onions in the same pan with more olive oil for 8-10 minutes until softened and caramelized.
  • Stir in sliced mushrooms and minced garlic, cooking for 5-7 minutes until tender, then add fresh thyme.
  • Deglaze the pan with balsamic vinegar and chicken broth, simmering and scraping up browned bits.
  • Return chicken to the pan, reduce heat to low, cover, and simmer for 5-10 minutes until cooked through and sauce thickens.
  • Taste, adjust seasoning, garnish with fresh parsley if desired, and serve immediately.

Notes

For an even richer flavor, consider using bone-in, skin-on chicken thighs and searing them until the skin is crispy. You can also add a splash of red wine along with the balsamic vinegar and chicken broth for added depth.
