Classic Banana Foster

  • 4 medium bananas, ripe but firm (with a few brown spots)
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup packed brown sugar (light or dark)
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup dark rum
  • 2 tablespoons banana liqueur optional
  • 1 teaspoon vanilla extract
  • Pinch salt
  • Vanilla ice cream for serving

Preparation

  • Peel and slice the bananas lengthwise, then crosswise, to get 4 pieces per banana, and set them aside.

Cooking

  • Melt the butter in a large sauté pan over medium heat, then add brown sugar and cinnamon, stirring until dissolved and bubbly for 2-3 minutes.
  • Place banana pieces cut-side down into the caramel sauce, cooking for 1-2 minutes per side until warmed and lightly caramelized, being careful not to overcook.
  • Remove the pan from heat, pour in rum and banana liqueur (if using) around the bananas, then return to very low heat.
  • Carefully ignite the rum by tilting the pan towards a flame or using a long lighter, standing back and letting the flames die down naturally for about 30-60 seconds, swirling occasionally. If not flambéing, simmer the rum for 2-3 minutes.
  • Once flames are gone, remove from heat, stir in vanilla extract and a pinch of salt, then gently spoon the caramel sauce over the bananas.

Serving

  • Scoop vanilla ice cream into bowls, arrange warm caramelized bananas over it, and drizzle with the remaining warm caramel sauce from the pan, serving immediately.

Notes

For extra flavor, you can add a pinch of nutmeg along with the cinnamon. Ensure your bananas are ripe but still firm to prevent them from becoming mushy during cooking. Be extremely careful when flambéing; have a lid nearby to smother the flames if necessary, and keep your face and hair away from the pan. If you prefer not to use alcohol, you can skip the rum and banana liqueur, and instead add a bit more vanilla extract or a splash of orange juice for flavor!
