Fritter Batter

  • 2-3 ripe bananas the riper, the better for sweetness!
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon optional, but highly recommended for warmth
  • salt Pinch of
  • 1/2 cup milk dairy or non-dairy works
  • 1 large egg
  • 1 teaspoon vanilla extract

For Frying and Dusting

  • Vegetable oil or canola oil for frying
  • Powdered sugar for dusting

Preparation

  • In a medium bowl, mash the ripe bananas with a fork until mostly smooth but retain a few small lumps for texture.
  • In a separate large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon (if using), and salt.
  • Add the milk, egg, and vanilla extract to the mashed bananas and stir until just combined.
  • Pour the wet banana mixture into the dry ingredients, stirring gently until just combined without overmixing; some flour lumps are acceptable.

Frying and Serving

  • Heat about 2-3 inches of oil in a deep skillet or pot over medium heat to 350°F (175°C).
  • Carefully drop spoonfuls of batter into the hot oil, ensuring not to overcrowd the pan, and fry for 2-3 minutes per side until golden brown and cooked through.
  • Remove fritters with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  • Dust generously with powdered sugar while warm and serve immediately.

Notes

For extra flavor, consider adding a pinch of nutmeg to the dry ingredients. Ensure the oil temperature is maintained to prevent the fritters from becoming greasy or burning.
