Ingredients
  

For the Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • Salt and black pepper to taste

For the Bang Bang Sauce:

  • 0.5 cup mayonnaise Japanese mayo like Kewpie works wonders for extra richness
  • 0.25 cup sweet chili sauce
  • 1-2 tbsp sriracha adjust to your spice preference
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar

For Garnish (Optional):

  • Chopped fresh cilantro
  • Sesame seeds
  • Thinly sliced green onions

Instructions
 

Prepare the Chicken

  • In a medium bowl, combine cubed chicken with olive oil, soy sauce, garlic powder, ginger powder, salt, and pepper; toss well to coat. Marinate for 15-30 minutes at room temperature, or up to 4 hours in the refrigerator for deeper flavor.

Make the Skewers

  • Thread the marinated chicken pieces onto prepared skewers, ensuring not to pack them too tightly for even cooking.

Whip up the Sauce

  • In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (or maple syrup), and rice vinegar until smooth. Taste and adjust spice or sweetness as desired.

Cook the Chicken

  • For grilling, preheat to medium-high, lightly oil grates, and cook skewers 3-4 minutes per side until chicken is cooked through with char marks. For baking, preheat oven to 400°F (200°C), arrange skewers on parchment-lined baking sheet, and bake for 18-25 minutes, flipping halfway. For pan-frying, heat a large skillet or grill pan over medium-high heat with a little oil, then cook skewers for 4-6 minutes per side until golden brown and cooked through.

Sauce it Up

  • Once cooked, either toss the skewers in a large bowl with half to three-quarters of the Bang Bang sauce until evenly coated, or arrange on a platter and generously drizzle the sauce over them.

Garnish and Serve

  • Garnish with fresh cilantro, sesame seeds, and green onions if desired, then serve hot with extra sauce for dipping.

Notes

For best flavor, ensure chicken is marinated for at least 15-30 minutes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking. Adjust sriracha in the Bang Bang sauce to your preferred spice level. These skewers are versatile and can be cooked on the grill, in the oven, or pan-fried, offering flexibility to suit your available equipment and preference.
