  • 2 cloves garlic
  • 0.25 cup extra virgin olive oil plus more for drizzling
  • 1 tbsp balsamic vinegar or to taste
  • 0.5 tsp sea salt or to taste
  • 0.25 tsp black pepper or to taste

  • 2 tbsp grated Parmesan cheese for garnish
  • Balsamic glaze for drizzling at the end

  • Crostini, pita chips, crackers or toasted baguette slices

Instructions
 

Preparation

  • Wash and core the tomatoes, then finely dice them and place in a medium mixing bowl.
  • Add the finely chopped fresh basil and minced garlic to the bowl with the tomatoes.
  • Pour in the extra virgin olive oil and balsamic vinegar, then season with sea salt and black pepper.
  • Gently stir all ingredients until well combined, being careful not to overmix to maintain tomato texture.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and deepen.

Serving

  • Before serving, taste the dip and adjust seasoning as needed for salt, pepper, or balsamic vinegar.
  • Transfer the dip to a serving bowl, and if desired, sprinkle with Parmesan cheese or drizzle with balsamic glaze.
  • Serve immediately with your choice of crostini, pita chips, crackers, or toasted baguette slices.

Notes

For an enhanced flavor profile, consider using a mix of different ripe tomato varieties. Adjust the amount of garlic and balsamic vinegar to your personal preference for a bolder taste. This dip can be prepared a few hours in advance, allowing the flavors to deepen even further into the tomatoes. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days, though fresh is always best!
