  • 3 cups ripe Roma tomatoes finely diced
  • ½ cup fresh basil leaves finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or good quality balsamic vinegar
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

  • 1 tablespoon finely grated Parmesan cheese Optional

Instructions
 

Preparation

  • Wash and finely dice the Roma tomatoes; place them in a medium mixing bowl.
  • Rinse, pat dry, and finely chop the fresh basil leaves; add to the bowl with the tomatoes.
  • Peel and finely mince the garlic cloves; add the minced garlic to the bowl.

Assembly

  • Pour the olive oil and balsamic glaze or vinegar over the tomato mixture.
  • Sprinkle in salt, black pepper, and optional red pepper flakes or Parmesan cheese; gently stir until well combined.
  • Cover and let the dip rest at room temperature for at least 15-30 minutes to meld flavors.

Serving

  • Transfer the dip to a serving bowl and serve with crostini, toasted baguette slices, pita chips, or crackers.

Notes

For an enhanced flavor, consider using high-quality balsamic vinegar which adds a deeper, more aged sweetness to the dip. If you love a little heat, don't skip the red pepper flakes!
