Ingredients
  

Filling

  • 1 lb lean ground beef
  • 1/2 cup chopped yellow onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 1/2 cups shredded cheddar cheese or a cheddar-jack blend

Assembly and Frying

  • 14-16 eggroll wrappers
  • Vegetable oil for frying (about 3-4 cups)
  • Water for sealing wrappers

Instructions
 

Making the Filling

  • In a large skillet, brown the ground beef and onion over medium-high heat, then drain any excess grease thoroughly.
  • Return the skillet to medium heat, add garlic, salt, pepper, Worcestershire sauce, ketchup, and mustard, and cook for 2-3 minutes to meld flavors.
  • Remove from heat, stir in shredded cheddar cheese until melted, and let the filling cool slightly.

Assembling the Eggrolls

  • Place 2-3 tablespoons of filling onto each eggroll wrapper, folded like a diamond, just below the center.
  • Fold the bottom corner over the filling, then fold in the side corners, rolling tightly upwards and sealing the top edge with water.

Frying and Serving

  • Heat 3-4 inches of vegetable oil to 350°F (175°C) in a deep pot.
  • Fry 3-4 eggrolls at a time for 3-4 minutes, turning occasionally, until golden brown and crispy.
  • Remove eggrolls with tongs and drain on paper towels; serve immediately with dipping sauces.

Notes

Ensure the filling is not too hot when assembling the eggrolls to prevent wrappers from tearing. Do not overcrowd the pot when frying to maintain oil temperature and ensure even cooking. Serve with your favorite dipping sauces like sriracha mayo, ranch, or a classic ketchup-mustard blend.
