Ingredients
  

For the Apples:

  • 4-8 medium-sized firm baking apples (such as Honeycrisp, Granny Smith, Fuji, Gala, or Braeburn)
  • 2 tablespoons melted butter for brushing apples
  • 1 tablespoon brown sugar for sprinkling on apples

For the Classic Cheesecake Filling:

  • 8 oz (1 block) cream cheese, softened
  • 1/4 cup granulated sugar or to taste
  • 1 large egg yolk or 1/2 a small egg
  • 1 teaspoon vanilla extract
  • ground cinnamon or nutmeg optional

For the Topping/Garnish (suggestions):

  • Chopped pecans or walnuts
  • Caramel sauce or maple syrup for drizzling
  • Whipped cream or a scoop of vanilla ice cream

Instructions
 

Preheat and Prep Apples

  • Preheat your oven to 375°F (190°C). Wash and core each apple, leaving a 1/2-inch border at the bottom to prevent filling leakage, creating a wide cavity.

Prepare Apples for Baking

  • Brush the outside of each apple with melted butter and sprinkle with brown sugar, then place them in a baking dish with space in between.

Make the Cheesecake Filling

  • Beat softened cream cheese and sugar until creamy. Mix in egg yolk and vanilla extract, adding a pinch of cinnamon or nutmeg if desired, being careful not to overmix.

Stuff the Apples

  • Spoon or pipe the cheesecake filling generously into the hollowed-out center of each apple, mounding it slightly.

Bake

  • Pour about 1/4 inch of water into the baking dish and bake for 35-50 minutes, or until apples are tender and filling is set and lightly golden.

Cool and Serve

  • Remove from the oven and let cool slightly on a wire rack. Serve warm, optionally garnished with caramel sauce, chopped nuts, or whipped cream.

Notes

The cooking time for the apples will vary based on their size and type. For best results, use firm baking apples that hold their shape well, and adjust cooking time as needed until they are fork-tender. If you prefer a richer flavor, consider adding a dash of brandy or rum to the cheesecake filling. For an extra crunch, toast the chopped pecans or walnuts before garnishing.
