Ingredients
  

Cheesecake Truffle Filling

  • 8 ounces full-fat cream cheese softened to room temperature
  • 1/2 cup powdered sugar sifted
  • 1 teaspoon vanilla extract
  • 1/2 cup finely crushed graham cracker crumbs

Coating & Toppings

  • 10-12 ounces baking chocolate milk, dark, or white, melted
  • Sprinkles Optional

Instructions
 

Preparation

  • In a medium bowl, combine softened cream cheese, sifted powdered sugar, and vanilla extract; beat with an electric mixer until smooth.
  • Gently fold in the graham cracker crumbs until just combined.
  • Cover the bowl and refrigerate the mixture for at least 30 minutes, or until firm enough to roll.

Forming & Freezing

  • Line a baking sheet with parchment paper; roll the chilled mixture into 1-inch balls and place them on the prepared sheet.
  • Freeze the rolled truffles on the baking sheet for 15-20 minutes.

Dipping & Finishing

  • Melt your chosen baking chocolate using a microwave or double boiler until smooth.
  • Dip each frozen truffle into the melted chocolate, coating completely, and gently tap off excess.
  • Immediately after dipping, add desired toppings.
  • Return dipped truffles to the parchment-lined baking sheet and refrigerate for at least 30 minutes until the chocolate sets.

Notes

For best results, ensure all ingredients are at room temperature when beginning, especially the cream cheese, to prevent lumps. Adjust the type and amount of chocolate to your personal preference. When melting chocolate, be careful not to overheat it, as this can cause it to seize. If the chocolate becomes too thick while dipping, you can gently re-warm it. Get creative with your toppings – chopped candies or mini chocolate chips also work wonderfully! These truffles are best stored in an airtight container in the refrigerator.
