  • 1-1.5 lbs ground beef preferably 80/20
  • 12-16 oz short pasta elbow macaroni, penne, rotini, or egg noodles
  • 1 medium onion chopped
  • 2-3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup beef broth
  • 2-3 cups shredded cheese a mix of cheddar and Monterey Jack recommended
  • 1/2 cup milk or cream optional, for extra creamy sauce
  • Salt, black pepper, Italian seasoning to taste
  • red pepper flakes Pinch, optional
  • Olive oil for sautéing

Instructions
 

Preparation

  • Cook pasta until al dente according to package directions, then drain and set aside.
  • Heat olive oil in a large skillet or Dutch oven over medium-high heat, then brown the ground beef, breaking it up and draining any excess grease.
  • Reduce heat to medium, add chopped onion and sauté for about 5 minutes until softened; stir in minced garlic and cook for another minute until fragrant.
  • Pour in diced tomatoes with juices and beef broth; stir in milk or cream if using, and add seasonings.
  • Bring to a gentle simmer, stirring occasionally, and cook for 5-7 minutes to meld flavors and slightly thicken the sauce.
  • Stir the cooked pasta into the beef and sauce mixture until well combined.
  • Transfer half of the pasta and beef mixture into a 9x13 inch baking dish; sprinkle generously with about a third of the shredded cheese.
  • Spoon the remaining pasta and beef mixture over the first layer, then top evenly with the remaining cheese.
  • Cover the baking dish loosely with aluminum foil and bake in a preheated oven at 375°F (190°C) for 20 minutes.
  • Remove the foil and continue baking for another 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden brown.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For a richer flavor, use a mix of sharp cheddar and Monterey Jack cheese. You can also add a pinch of smoked paprika for extra depth. If you prefer a milder taste, omit the red pepper flakes. This casserole reheats well and is great for meal prepping. Enjoy with a side salad or crusty bread.
